How can you be 100% sure local LLM apps aren't sending your data anywhere?

I run models offline with apps like LM Studio and Ollama. The whole point for me is privacy. But how do I actually know nothing leaves my machine? The model file is just weights, but the app around it could phone home. Is there a way to verify this for sure? What do you do?
